A delicious and easy vegetable tortilla quiche with spinach, peas, sun-dried tomatoes, and feta, all baked in a crispy tortilla crust. Perfect for a quick and healthy meal!

  • 1 tortilla
  • 3 eggs
  • 100 mlcream
  • 1 tspmustard
  • 1 tspItalian Herbs
  • 0.25 tspHimalayan Salt
  • 30 gbaby spinach
  • 100 gpeas
  • 0.5 spring onion
  • 20 gsun-dried tomatoes
  • 100 gfeta cheese
  • 30 ggrated Parmesan

Preparation

    Preheat the oven to 190 °C. In a bowl, whisk together the eggs, cream, salt, Kotányi Herbs Italian Style, and mustard.

    Place the tortilla in a pie tin (or a cake tin). Layer the spinach, peas, spring onion, sun-dried tomatoes, and feta cheese over the tortilla, then pour in the egg mixture. Sprinkle with Parmesan.
