Bread Salad with Ricotta and Mediterranean Seasoning
15—20 MinBread doesn't always have to be just an accompaniment. Here we will show you how ciabatta can take on the starring role in a salad. The croutons are paired with pine nuts, luscious cherry tomatoes, arugula and ricotta to give them a Mediterranean touch. The Tomato Herbs Spicy Mix from the Spice up my Salad range gives the dressing a distinctive flavor.
Ingredients 4 Portions
- 200 gCiabatta
- 70 gPine nuts
- 170 gArugula
- 100 gCherry tomatoes
- 70 gRicotta
For the dressing
- 3 tbsp.Dark balsamic vinegar
- 1 tsp.Honey
- 0.5 pcs.Lemon, juice
- 1 tbsp.Tomato Herbs Spicy
- 1 pinchSea Salt, Coarse
- 1 pinchPepper Black, Whole
Preparation

Toast the pine nuts in a pan until golden brown and put to one side.

Dice the ciabatta and toast in olive oil until golden brown.

Wash and shake the arugula dry. Cut the cherry tomatoes into quarters.

Crumble the ricotta over the salad.

To make the dressing, combine the remaining ingredients and dress the salad.
Hint:
Add crushed garlic to the bread before toasting; this will make the salad even tastier!
