
Couscous Salad with Feta and Sweet Potato
20—30 MinThis is an exotic couscous salad that will give you that vacation feeling even as summer is drawing to a close, thanks to fresh ingredients like mango and avocado. Additionally, our Organic Curry seasoning mix goes perfectly with this dish.
Ingredients 4 Portions
- 250 gCouscous
 - 2 tbsp.Olive oil
 - 200 gFeta
 - 1 pieceSweet potato, precooked
 - 1 pieceAvocado
 - 1 pieceMango
 - 3 pieceSpring onions
 - 1 Handful of fresh mint
 - 1 pieceLemon
 - 1 tsp.Black sesame seeds
 - 2 tbsp.Organic Curry Seasoning Mix
 
Preparation

Cook the couscous according to the instructions on the packaging, mix with the Organic Curry seasoning mix and olive oil and put to one side.

Dice the vegetables and fruit, slice the spring onions into fine rings and crumble the feta.

Grate 1 tsp. of lemon zest and squeeze the lemon. Thinly slice the mint. Mix all the ingredients except for the sesame seeds with the couscous.

Garnish with the sesame seeds and enjoy.
